On baking [Baileys Cupcakes]

My mom never really did a lot of baking except for my birthday cakes. I still remember one time when we made gingerbread for christmas. Usually she didn't care much for making a mess so you can imagine my surprise when she dumped the flour uncerimoniously on the table and cracked some eggs open.

My father doesn't do a whole lot of baking either. He actually only ever bakes lemon sheet cake with lemon icing. A recipe which he got from his grandmother.

The first time I actually made cookies for christmas was this last christmas. 



 Baileys Cupcakes:
Difficulty: Easy
Time: 15 minutes preparation + 20-25 baking time
Cost: ~10€
Servings: 18 

Baileys Cupcakes with Baileys Frosting


  • 150 grams Butter
  • 150 grams Sugar
  • 150 grams Flour
  • 125milliliters Baileys
  • 2  Eggs
  • ½ teaspoons Baking Powder
  • ½ teaspoons Vanilla Sugar
  • 2 Tablespoons Ground Almonds
Cream butter and sugar properly, then add the eggs. Stir the flour in slowly also add baking powder and vanilla sugar.
Pour the Baileys into the mixture slowly and stir well, then add the grounded almonds.
Preaheat the oven to 170°C. Baking time is 20-25 minutes. 

Baileys Frosting:
  • 1 cup Baileys
  • 5 Tablespoons Flour
  • 1 cup Butter
  • ½ cups Sugar
  • ½ cups Powdered Sugar
  • 1 teaspoon Vanilla Sugar
Mix the Baileys thoroughly with the flour and put on medium heat. Stir until the mixture is firm, then let it cool down.
Cream butter sugar and vanilla sugar.
Add the Baileys-flour mixture when it is cooled down completly and stir for 1 minute or less.

Lightning strikes [Tiramisu]

Ironically I noticed how much I liked baking when our oven stopped working after a lightning storm. The thing that made me want to bake was this http://bittykate.deviantart.com/art/Mocha-Cupcakes-205888259 picture. Since there was no chance of baking in our flat, I asked my mom if it'd be ok if I used her oven after eating at her flat like I do every saturday since I moved out. She said yes and so I went and tried to bake mocha cupcakes. While not my moste succsesfull baking expirience the cupcakes where edible and I had a lot of fun making them. 
On sunday I decided I wanted to make something sweet and cake like despite our oven not working. I always loved my moms Tiramisu and so I decided to try myself.
The outcome was satisfactoryor to put it in my roommates words... "If you absolutly have to you can make it again. Every week."
Difficulty: Easy
Time: 30 minutes preparation + 6hrs cooling time
Cost: ~7€
Servings: 8



  • 500 grams Mascapone
  • 200 milliliters Strong Coffee
  • 100 grams Powdered Sugar
  • 1 teaspoon Vanilla Sugar
  • 40 pieces Ladyfingers
  • 1 teaspoon Rum
  • 4  Eggs (separated)
  • Unsweetend Cocoa
Whisk egg whites until stiff.
Mix sugar and vanilla sugar with the egg yolks and then add the mascapone, stir well.
Fold egg whites into the mixture.
Mix the coffee with the rum (I use captain morgan) and soak the ladyfingers brifly.
Then layer the ladyfingers and the mascaponecreme into a backing or casserole dish. Starting with lady fingers and ending on mascapone.
Then refrigerate the dish for at least 6 hrs or better yet the whole night.
Befor serving dust the tiramisu with cocoa, but don’t use to much cocoa.
It’s also possible not to use the egg whites, the tiramisu will have a yellow tint but taste pretty much the same.

A few words about myself

This is meant to be a short introductory post. In this blog I'll ramble about everything and nothinhg with some easy recipes for university students like my self thrown in.
A friend of mine once told me I have the organizing skills of a half dead squirrel with epileptic seizures...
This is one of the truest things anyone has ever said about me. Thoughts flutter trough my mind like errant birds and I keep hopping from one topic to another often forgetting just what I wanted to do or say.
I'm a physics student at university and live in a flat with two roommates (who're a couple) and thee birds. All of whom I adore most of the time.
People who see my bookshelfs always tend to be amazed how many books I have,  reading is a passion of mine and I can't give books away so they keep accumulating.
When I lived with her my mother always made me keep her company while she was cooking teaching me quiet a few things on the way. On a class trip a few years ago I noticed that most of my year mates couldn't even cook scrambled eggs.Which is why you'll get some easy to cook and relativly cheap recipes from me.
